Schol is not really a very good tracker fortunately however Jhereg has been careless. The Inn keeper was still talking about the visit to some patrons and Schol's hearing is very good. Also knowing which direction Jhereg is going helps. So Schol watches for the signs that Brennan told Schol about and checks list of things he's to look for every so often.
Eventually Schol comes across a cold camp that might have been Jhereg's. The owners were easy to follow and Schol eventually caught up to them only to find it was a group of Bounty hunters looking for him. Schol garroted a sentry and left the body on it's bed roll with his wanted poster attached to the body by it's own knife. The Second camp Schol came across was truly Jhereg's. The Marks in a near by tree could only come from a bow and the garbage left nearby marked it as Jhereg's.
Schol eventually spotted a hot camp along Jhereg's trail late in the night. Schol was certain he could catch Jhereg the next night. Unfortunately Schol overshot Jhereg the next evening and didnn't realize it until he came to a clearing and saw the smoke behind him. Schol took to a secluded area bedded down his horse and hid for the day.

Things Jhereg could have spotted along the way. The dead Bounty hunter sans wanted poster.
A bit of a trail including horse droppings.
(Schol leads his horse most of the time during the night so he makes pretty good time. Roughly 40 miles or so a night. Weather and terrain permitting.)
He might spot a cold camp shortly after having seen the bounty hunters.
Schol would have probably done a spiral search pattern after leaving the bounty hunters trying to pick up Jhereg's trail again.
He might have heard a horse during the night once or twice.
That's about all I can think of for now.
